Hi Meg! I think either of those would be delicious! My only thought is that burrata is much softer/creamier than mozzarella and probably won't need as much cooking time to melt. So in that case, I'd probably start baking the pizza as directed with the tomatoes but not the cheese, pull it out a few minutes before it's done, sprinkle the burrata over the top, and then let it bake for the final 3 or 4 minutes until the cheese is just melted. Hopefully that makes sense!
